A Peek Behind The Scenes

This week we’d like to share a glimpse into what goes on behind the scenes at Peace & Harmony, and talk a bit about the how and the why when it comes to crafting our tea blends. Some of our favorite days on the farm are spent in the kitchen, mixing, sampling, and remixing our teas until they are perfect for you! With Autumn nearly upon us, this past Monday was spent blending a variety of much-anticipated teas that will be debuting in the coming weeks. Pictured above is our first foray into butterfly pea flower, an herb that is equal parts beautiful and useful. Here, it’s used in a blend formulated to help with focus, which will be on offer shortly in time for exams!

Our process for crafting tea blends is a practical, yet joyfully creative endeavor. We start with a concept, such as a symptom, season, condition, or frequent request from our customers (yes, we love to hear your ideas!). We then consult herbal sources and studies to identify the best botanicals to use in a given formulation. We carefully select and sample our ratios with consideration to both the relative strength and the flavor of the ingredients. Each tea blend goes through numerous taste tests, both plain and sweetened with honey, until we’re satisfied that it’s balanced and delicious! We also give consideration to the visual presentation of our blends, incorporating vibrant elements such as our own echinacea flowers, pictured below.

Some blends are crafted as limited batches or rotate seasonally, while others are available year-round. If a limited blend is particularly popular, it may stick around, as in the case of our Hug Your Heart tea that was originally released for Valentine’s Day. In addition to formulating four tea blends, which will be released at market over the next few weeks, we also had a chance to blend and sample a series of culinary spices that we’re very excited about. Instead of composting our fire cider mash (what remains when the liquid is strained), we thought to try dehydrating it and using it as a seasoning. It blew us away! We plan to offer three versions of this punchy seasoning: on its own as Fire Spice, a Fire Salt, and Cheese On Fire, which we sampled, and loved, on popcorn! We think you’ll love them too. These spices will be available as soon as bottles arrive, and we’ll have plenty of delicious recipe ideas to go with them.
